Cherry and cinnamon palmiers

Stuck on dessert? Stock your freezer with this versatile pastry for quick and easy sweet treats.
Ingredients:
  • 27.00 gm white sugar
  • 0.63 gm ground cinnamon
  • 1 sheet frozen ready-rolled Puff pastry, partially thawed
  • 2 tsp cherry jam
Instructions:
  • Preheat the oven to 220°C/200°C fan-forced and line a large baking tray with baking paper.
  • Lay a 30cm x 35cm piece of baking paper on a flat surface. Mix sugar and cinnamon together in a bowl. Create a 25cm square in the middle of the baking paper. Evenly sprinkle the sugar mixture over the square. Place the pastry on top and gently press to stick the sugar mixture. Spread jam over the pastry.
  • Fold two opposite edges of the pastry towards the center, then repeat. Fold one side on top of the other to create a log. Cut the log into 1cm-thick slices. Pinch the base of each slice firmly to form a 'Y' shape. Arrange on a tray with 4cm of space in between each piece.
  • Bake for 10 minutes, then flip and continue baking for 5 to 6 more minutes until golden and puffed. Serve.
