Cherry-infused brioche bread pudding: moist, tender, sweet.
Ingredients:
  • 2 cups vanilla almond milk
  • 0.33333334326744 cup white sugar
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon ground cinnamon
  • 5 cups 1-inch cubes of day-old Brioche bread
  • 3 large eggs
  • 1.25 cups pitted and halved cherries
  • 1 teaspoon cinnamon sugar, or as needed
Instructions:
  • In a small saucepan over low heat, gently meld together milk, sugar, butter, vanilla, cinnamon, and salt until the butter has just melted. Let cool.
  • Prepare the baking dish by greasing an 8x8-inch pan or spraying it with cooking spray.
  • Place the bread cubes in the baking dish. Combine eggs with the butter mixture until smooth. Pour this mixture over the bread cubes, pressing gently to ensure they are covered. Mix in the cherries and spread evenly. Allow to soak for 30 minutes.
  • Preheat the oven to 350°F (175°C) and generously sprinkle cinnamon sugar over the bread pudding.
  • Bake for about 65 minutes until the top is golden brown and the custard is set in the center. The bread pudding will puff up like a souffle but will settle after baking. Let it cool on a baking rack for 10 minutes before serving warm or at room temperature.
