Indulge in a decadent chocolate cherry croissant paired with luscious bread pudding for an impressive breakfast treat.
Ingredients:
  • 4 whole eggs
  • 1 egg yolk
  • 3/4 cup sugar
  • 2 1/2 cups milk
  • 2 1/2 cups whipping cream
  • 1 tablespoon vanilla
  • 7 large (5 1/2x4 1/2 inches) croissants, cut into 1 1/2-inch pieces (10 cups)
  • 1 cup dark chocolate chips
  • 2 tablespoons butter, melted
  • 2 tablespoons sugar
  • 1/2 cup dried cherries
  • 1/4 cup sugar
  • 1 tablespoon cornstarch
  • 1/2 cup water
  • 1 bag (10 oz) frozen dark sweet cherries
  • 1/2 teaspoon vanilla
Instructions:
  • Preheat oven to 325°F. Grease a 13x9-inch (3-quart) glass baking dish with shortening or cooking spray. In a large bowl, whisk together 4 whole eggs, 1 egg yolk, and 3/4 cup sugar until smooth. Add milk, whipping cream, and vanilla, mix well. Gently fold in 7 cups of croissant pieces and let it sit for 20 minutes. Transfer the mixture to the baking dish. Sprinkle chocolate chips over the top. Lightly press the remaining 3 cups of croissant pieces on top. Brush the croissant pieces with butter and sprinkle with 2 tablespoons of sugar. Top with dried cherries.
  • Bake without cover for 55 to 65 minutes until the top is a light golden brown and the center slightly jiggles. Allow to cool for 30 minutes before serving.
  • In a 2-quart saucepan, combine 1/4 cup sugar, cornstarch, and water until smooth. Add frozen cherries and cook over medium-high heat, stirring constantly, until mixture boils and thickens. Let it boil for 1 minute, then remove from heat and stir in vanilla. Allow it to cool for at least 10 minutes before serving.
  • Drizzle the luscious sauce over the cozy bread pudding and store both covered in the fridge.
