Indulgent chocolate cherry muffins make a decadent dessert.
Ingredients:
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1 egg
  • 1 1/2 cups Gold Medal™ all-purpose flour
  • 3/4 cup granulated sugar
  • 1/2 cup unsweetened baking cocoa
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup chopped maraschino cherries, well drained and 2 tablespoons cherry juice reserved
  • 1 cup powdered sugar
Instructions:
  • Preheat oven to 375°F. Grease only the bottoms of 6 jumbo muffin cups (3 1/2x1 3/4 inch) or 12 regular-size muffin cups (2 1/2x1 1/4 inch) with shortening, or use paper baking cups.
  • In a medium bowl, whisk together milk, oil, and egg until combined. Gently fold in all ingredients except cherries, juice, and powdered sugar until just moistened. Carefully mix in the cherries. Fill muffin cups equally with batter (they should be almost full for 12 regular-size muffins).
  • Bake jumbo muffins for 23-25 minutes and regular-size muffins for 18-20 minutes until a toothpick inserted in the center comes out clean. Let jumbo muffins cool for 10 minutes and regular-size muffins for 5 minutes before removing them from the pan.
  • Combine powdered sugar and 2 tablespoons of reserved cherry juice in a small bowl using a spoon. Drizzle the mixture over the warm muffins and serve immediately.
