Delicious savory bread pudding with cherry tomatoes, Romano cheese, and fresh basil - perfect for a cozy evening paired with wine.
Ingredients:
  • 8 ounces ciabatta bread, cut into cubes
  • 1 large shallot, thinly sliced
  • 12 ounces cherry tomatoes, halved
  • kosher salt and freshly ground black pepper to taste
  • 1 cup packed, chopped fresh basil
  • 1.5 cups freshly grated Romano cheese
  • 1 cup whole milk
  • 6 large eggs, at room temperature
  • 1 teaspoon kosher salt
  • 0.5 teaspoon freshly ground black pepper
  • 0.5 teaspoon onion powder
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C), then generously grease a 9x13-inch glass baking dish before adding the bread cubes to it.
  • In a large skillet, heat olive oil over medium-high heat. Sauté shallot and garlic, stirring constantly, until fragrant for about 1 minute. Add tomatoes, salt, and pepper. Cook until tomatoes slightly soften, about 2 minutes. Remove from heat, mix in basil, then pour over the bread. Sprinkle Romano cheese on top and mix until well combined.
  • In a large bowl, whisk together milk, eggs, salt, pepper, garlic powder, and onion powder until creamy. Carefully pour the custard over the bread mixture and gently mix to cover evenly.
  • Place in the center of the preheated oven until golden and slightly puffed, for 24 to 30 minutes. Allow to cool for 5 minutes, then slice into wedges and serve.
