Easy cherry crunch dessert for cheesecake fans craving simplicity and a lighter texture.
Ingredients:
  • 1.5 cups all-purpose flour
  • 2 tablespoons white sugar
  • 0.75 cup butter, softened
  • 1 cup chopped pecans
  • 2 cups confectioners' sugar
  • 1 (8 ounce) package cream cheese, softened
  • 1 (12 ounce) container frozen whipped topping (such as Cool Whip®), thawed
  • 1 teaspoon vanilla bean paste
  • 2 (21 ounce) cans cherry pie filling
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect baking temperature.
  • In a medium bowl, combine flour, sugar, and salt, then whisk together. Use a pastry blender, fork, or your fingers to cut in the butter until crumbly. Add pecans and stir. Press the mixture evenly into an ungreased 9x13-inch baking pan.
  • Bake the crust in the preheated oven until it turns a beautiful golden brown, which should take around 20 minutes. Allow it to cool before moving on to the next step.
  • In a large bowl, mix confectioner's sugar and cream cheese until smooth. Gently fold in thawed whipped topping and stir in vanilla bean paste.
  • Smooth the creamy and luscious cream cheese filling over the buttery crust, and generously layer the vibrant cherry pie filling on top. Chill in the refrigerator until it's time to enjoy this delectable treat.
