Indulge in delightful cherry pie bars for a hassle-free, mouthwatering summer dessert. Enjoy with your choice of cherries - fresh, frozen, or canned pie filling.
Ingredients:
  • For the filling
  • 3 tablespoons cornstarch
  • 3 tablespoons water
  • 3 1/2 cups pitted cherries, fresh or frozen
  • 1/2 cup sugar
  • 1 tablespoon lemon juice
  • For the crust
  • 2 1/4 cups (270g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1/2 cup (100g) sugar
Instructions:
  • Create a velvety cornstarch slurry by combining cornstarch and water in a small bowl until perfectly smooth. Set aside for later use.
  • Prepare the cherry pie filling: Combine cherries, sugar, and lemon juice in a medium pot over medium-high heat. Stir until cherries begin to release their juices, approximately 5-6 minutes for frozen cherries and 3-4 minutes for fresh cherries. Stir in cornstarch slurry, allowing the mixture to simmer over medium-low heat until cherries are tender and liquid thickens to a syrup-like consistency, about 3-6 minutes. Remove from heat and set aside.
  • Preheat your oven to 350°F. Grease and line a 9x9-inch baking dish with parchment paper, ensuring some hangs over the sides for easy removal of the bars post-baking.
  • Prepare the shortbread dough: Combine flour, baking powder, and salt in a large bowl. In a separate bowl, beat butter and sugar with a hand mixer until light and fluffy. Mix in egg and vanilla extract. Gradually add the dry ingredients and mix until a crumbly dough forms.
  • Create the cherry pie bars: Press most of the shortbread dough into a solid base in the baking dish, keeping a portion aside. Spread the cherry pie filling evenly over it. Crumble the remaining dough into small pieces and sprinkle on top.
  • Bake the bars until the shortbread topping turns a light golden brown, about 25 to 30 minutes. Allow to cool in the pan for at least 1 hour before serving.
  • Prepare the icing by combining powdered sugar, heavy cream, and vanilla extract in a medium bowl. Mix with a fork or whisk until smooth and lump-free. Drizzle the icing over the bars right before serving. Enjoy the bars cold from the fridge or let them sit at room temperature for 1-2 hours.
