Try these quick and delicious cherry snowball cookies for a fun twist on a classic favorite!
Ingredients:
  • 1.25 cups confectioners' sugar, divided
  • 0.5 cup butter, softened
  • 1 cup all-purpose flour
  • 0.25 cup quick cooking oats
  • 0.25 cup finely chopped sweetened coconut
  • 0.25 cup finely chopped walnuts
  • 1 pinch salt
  • 15 maraschino cherries, finely chopped
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and prepare a baking sheet by lining it with parchment paper.
  • Using an electric mixer, blend 1/4 cup confectioner's sugar and butter until smooth. Then add flour and mix for 5 seconds, followed by oats, coconut, walnuts, and salt, each mixed for 5 seconds.
  • Blend the cherries into the creamy butter mixture until the dough forms and becomes a delightful light pink color, approximately 25 seconds.
  • Using a spoon, place dollops of the dough 2 inches apart on the baking sheets.
  • Bake until slightly golden, about 18 minutes, then remove from the oven. Roll warm cookies in a shallow dish with 1 cup confectioners' sugar, ensuring they are fully coated. For an extra sweet finish, roll the cookies once more in confectioners' sugar.
