Cherry tomato and basil pikelets

Make stunning, flavorful pikelets by coating tomatoes in basil batter.
Ingredients:
  • 60g goat's cheese
  • 125g (1/2 cup) mascarpone
  • 20.00 ml chopped fresh chives
  • 115g (3/4 cup) self-raising flour
  • Pinch of bicarbonate of soda
  • 1 egg, lightly whisked
  • 20.00 ml chopped fresh basil
  • 12 small cherry tomatoes, halved
  • Fresh basil leaves, to serve
Instructions:
  • Mix together the goat's cheese, mascarpone, and chives in a small bowl, then season with salt and pepper.
  • Sift flour and bicarbonate of soda into a bowl. In a small jug, combine egg and milk. Whisk the egg mixture gradually into the flour mixture until smooth. Gently fold in chopped basil.
  • Heat half of the oil in a large non-stick frying pan. Spoon 6 tablespoons of batter into the pan, leaving space for spreading. Place 2 tomato halves, cut-side up, on each spoonful of batter, gently pressing down. Cook for 1 minute until bubbles form. Flip and cook for another minute until golden and cooked. Transfer to a plate. Repeat with the rest of the oil, batter, and tomatoes.
  • Spread the goat’s cheese mixture on top of the pikelets and garnish with basil leaves.
