Indulge in irresistible cherry tomato jam with basil. Perfect with goat cheese on crackers.
Ingredients:
  • 2.5 pounds cherry tomatoes, halved and stems removed
  • 1 cup finely chopped fresh basil
  • 0.5 cup finely chopped sweet onion
  • 3 tablespoons balsamic vinegar
  • 0.5 lemon, juiced
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon ground coriander
  • 0.25 teaspoon ground cumin
Instructions:
  • Check the two pint-sized jars for any cracks and make sure the rings are free from rust. Replace any jars with defects. Submerge the jars in hot water until the jam is done. Clean the new lids and rings by washing them in warm, soapy water.
  • In a medium saucepan over medium heat, mix tomatoes, sugar, basil, onion, vinegar, lemon juice, salt, pepper, coriander, and cumin. Bring to a boil, stir occasionally. Lower the heat and simmer until reduced by half, stirring occasionally, for 2 to 3 hours. Remove from heat.
  • Transfer jam into jars, ensuring they are hot and sterilized. Swipe a clean knife or thin spatula along the insides of the jars to eliminate air bubbles. Use a moist paper towel to wipe the rims clean of any residue. Let cool briefly, then seal with lids and tighten screw rings securely.
