Small Batch Cinnamon Rolls (No Yeast)

Yeast-free cinnamon rolls with chocolate chips for a delicious twist.
Ingredients:
  • nonstick cooking spray
  • 2 tablespoons white sugar, divided
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 0.125 teaspoon salt
  • 6 tablespoons milk, divided
  • 4 tablespoons unsalted butter, melted, divided
  • 1 teaspoon apple cider vinegar
  • 0.75 teaspoon vanilla extract, divided
  • 0.25 cup chocolate chips
  • 3 tablespoons light brown sugar
  • 1 teaspoon ground cinnamon
  • 0.5 cup powdered sugar
  • 1 tablespoon unsalted butter, softened
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and generously coat half of a 12-cup muffin tin pan with cooking spray.
  • Combine flour, 1 tablespoon of white sugar, baking powder, baking soda, and salt in a bowl, whisking until fully mixed.
  • In a separate bowl, mix together 5 tablespoons of milk, 2 tablespoons of melted butter, cider vinegar, and 1/4 teaspoon of vanilla. Pour the mixture into the flour and stir until a soft dough forms.
  • On a generously floured surface, press the dough into a thin rectangle. Drizzle the leftover melted butter on top of the dough. In a bowl, mix chocolate chips, brown sugar, cinnamon, and remaining white sugar, then spread the mixture over the buttered dough.
  • Roll the dough away from you, ensuring a tight roll. Pinch the seam shut. Cut into six pieces and place each in a muffin cup.
  • Bake until beautifully golden, about 14 minutes in the preheated oven.
  • Mix powdered sugar, softened butter, 1 tablespoon of milk, and 1/2 teaspoon of vanilla for icing. Adjust consistency to your liking.
  • Take the cupcake pan out of the oven and generously ice the rolls.
