Small Batch Lemon Blueberry Muffins

Easy heart smart blueberry lemon muffins made with Bisquick mix. Perfect for breakfast!
Ingredients:
  • 1/2 cup Bisquick Heart Smart™ mix
  • 1/4 cup fat-free egg product
  • 1 tablespoon sugar
  • 2 tablespoons fat-free sour cream
  • 1 teaspoon grated lemon peel
  • 2 teaspoons vegetable oil
  • 1/4 teaspoon vanilla
  • 1/4 cup fresh or frozen (do not thaw) blueberries
  • 1 teaspoon sugar
Instructions:
  • Preheat oven to 400°F. Line 4 regular-size muffin cups with paper baking cups and spray the insides with cooking spray.
  • Mix all ingredients in a small bowl until just moistened, excluding blueberries and 1 teaspoon sugar. Add blueberries and combine. Fill muffin cups with batter and sprinkle 1 teaspoon sugar over the tops.
  • Bake for about 12-13 minutes until a toothpick inserted in the center comes out clean.
