Elevate garlic and oil with cherry tomatoes and basil for a flavorful twist.
Ingredients:
  • 375g spaghetti
  • 75.08 gm extra virgin olive oil
  • 5 garlic cloves, crushed
  • 400g cherry tomatoes, halved
  • 82.50 ml roughly chopped fresh basil leaves
  • Grated parmesan or vegetarian hard cheese, to serve
Instructions:
  • Boil pasta in salted water according to package instructions until tender. Save 1/4 cup of the cooking liquid before draining.
  • In a large non-stick pan, gently heat oil over medium-low. Sauté garlic and cherry tomatoes for 3 to 4 minutes until tomatoes begin to soften. Mix in pasta and cooking liquid, season with salt and pepper, and toss for 1 to 2 minutes until well combined and heated. Serve with a sprinkle of parmesan and fresh basil.
