Cherry-Chocolate Truffles

Create luxurious truffle treats with a hint of sweet-tart cherry chocolate.
Ingredients:
  • 8 oz. semisweet chocolate, chopped
  • 4 oz. bittersweet chocolate, chopped
  • 1/4 cup half-and-half
  • 1 cup butter, softened
  • 1 cup finely chopped dried red tart cherries
  • 1/4 cup cherry-flavored brandy or liqueur
  • 2 1/2 oz. white chocolate baking bar, finely grated
  • Cocoa, if desired
  • 48 small (1-inch) paper or foil candy cups
Instructions:
  • In a saucepan over low heat, melt semisweet chocolate and bittersweet chocolate with half-and-half, stirring often. Once melted, remove from heat and let cool for 10 minutes before using.
  • Using a wire whisk, gradually incorporate butter into chocolate until smooth and creamy. Mix in cherries and liqueur. Cover and refrigerate for 1 1/2 hours, stirring twice, until mixture thickens and can be molded.
  • Lay out grated baking bar on waxed paper. Spoon chocolate mixture over it, then roll each into a ball shape. For a twist, coat some truffles in cocoa. Chill truffles in candy cups before serving.
