Create decadent chocolate truffles to suit your taste.
Ingredients:
  • 2 x 220g pkts good-quality milk chocolate, coarsely chopped
  • 125ml (1/2 cup) thickened cream
  • 40.00 ml Tia Maria liqueur
  • 150g (1 cup) mini marshmallows
  • 80g red glace cherries, chopped
  • 200g chopped peanuts
Instructions:
  • In a heatproof bowl set over a saucepan of simmering water, melt the chopped chocolate and cream together until smooth. Mix in the Tia Maria, then let it cool for 20 minutes. Gently fold in the mini marshmallows and cherries. Chill in the fridge for 4 hours before serving.
  • Prepare a tray lined with non-stick baking paper. Shape 2 teaspoonfuls of chocolate mixture into balls, coat with chopped peanuts, and place on the tray. Repeat with the remaining chocolate mixture. Chill in the fridge for 1 hour or until firm.
