Creamy cream cheese complements vibrant red gelatin, while juicy sweet cherries provide a burst of flavor.
Ingredients:
  • 2 boxes (4-serving size each) cherry-flavored gelatin
  • 1 1/2 cups boiling water
  • 2 cups frozen unsweetened sweet cherries
  • 2 cans (8 oz each) crushed pineapple in juice, undrained
  • 1/2 cup honey-nut cream cheese (from 8-oz container)
  • Leaf lettuce leaves, if desired
Instructions:
  • In a large bowl, dissolve gelatin in boiling water while stirring continuously. Mix in frozen cherries until thawed, then add pineapple.
  • Pour half of the gelatin mixture into an ungreased 8-inch square (2-quart) glass baking dish or another serving dish. Chill in the refrigerator for 30 to 45 minutes or until set.
  • Place small spoonfuls of cream cheese over the set gelatin mixture and gently spread it to cover the surface. Pour the remaining gelatin mixture over the top. Chill in the refrigerator for at least 2 hours until firm. Cut into squares and serve on lettuce leaves.
