Indulge in a divine French chestnut cake for a delightful dessert!
Ingredients:
  • 3 tablespoons butter or margarine
  • 1/4 cup Gold Medal™ all-purpose flour
  • 1 1/4 cups milk
  • 3 eggs, separated
  • 1 cup chestnut puree
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • Fresh thyme sprig, if desired
Instructions:
  • Preheat the oven to 350°F. Melt butter in a 2-quart saucepan over medium heat. Whisk in flour gradually and cook for 2 minutes until smooth and lightly browned. Slowly pour in the milk, stirring constantly until thickened and boiling.
  • Beat the egg yolks in a small bowl. Slowly stir in one-fourth of the hot milk mixture. Pour this mixture back into the saucepan and cook and stir for 1 minute. Remove from heat, then add the chestnut puree, cheese, salt, and pepper. Transfer the mixture into a food processor and process for 30 seconds until smooth.
  • Whip egg whites in a small bowl with an electric mixer until stiff peaks form. Gently fold the fluffy egg whites into the chestnut mixture, then transfer the mixture into an ungreased 1 1/2-quart soufflé dish.
  • Bake for 45-50 minutes until perfectly cooked, then adorn with a fresh sprig of thyme.
