Indulge in easy-to-make chewy biscuits for a delightful snack with your coffee or tea.
Ingredients:
  • 125.00 ml plain flour
  • 200g ground almonds (see note)
  • 215.00 gm caster sugar
  • 62.50 ml apricot jam
  • 3 eggwhites, at room temperature, whisked
  • 24 whole blanched almonds
Instructions:
  • - Preheat your oven to 160°C and line 2 baking trays with non-stick baking paper. - In a bowl, combine ground almonds, sugar, and flour. - Mix in the jam and egg whites until well combined.
  • Form mixture into 1 tablespoon-sized balls and arrange them on baking trays. Gently press an almond onto the center of each ball and flatten slightly. Bake for 15-18 minutes until lightly golden. Allow to cool for 5 minutes on the tray, then transfer to a wire rack. Enjoy with tea or coffee.
