Delicious almond butter cookies - nutty, sweet, and perfect for peanut allergy-friendly treat.
Ingredients:
  • 1 cup shortening
  • 1 cup creamy almond butter
  • 1 cup packed brown sugar
  • 1 cup white sugar
  • 2 tablespoons hot water
  • 2 large eggs
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) for the perfect cooking temperature.
  • In a large bowl, mix shortening, almond butter, brown sugar, and white sugar until smooth using an electric mixer. In a small bowl, combine hot water, baking soda, and salt, then stir into the almond butter mixture until creamy. Add eggs and vanilla extract, beat until well blended, and gradually stir in flour until just combined.
  • Shape the dough into walnut-size balls and arrange them 2 inches apart on ungreased baking sheets. Flatten each ball with a fork to make a crisscross pattern.
  • Bake in the preheated oven until edges are golden brown, for 8 to 12 minutes. Then cool briefly on the baking sheet before transferring to a wire rack to cool completely.
