Irresistible chewy granola bars filled with chocolate, cherries, almonds, coconut, oats, and peanut butter - ideal for breakfast or a quick energy boost.
Ingredients:
  • 2.25 cups old-fashioned rolled oats
  • 1 cup puffed rice cereal
  • 1 cup unsweetened coconut flakes
  • 1 cup slivered almonds
  • 1 cup dried tart cherries
  • 0.66666668653488 cup honey
  • 0.5 cup creamy peanut butter
  • 3 tablespoons brown sugar
  • 3 tablespoons coconut oil
  • 1 teaspoon salt
  • 0.5 cup mini semisweet chocolate chips
Instructions:
  • Place a sheet of parchment paper into a 9x13-inch baking pan, ensuring it extends up all sides of the pan.
  • In a large mixing bowl, mix together oats, rice cereal, coconut, almonds, and cherries. Set aside.
  • In a small saucepan, melt together honey, peanut butter, brown sugar, coconut oil, vanilla extract, and salt over medium heat until the brown sugar is dissolved. Simmer for an additional minute. Pour the warm mixture into the dry ingredients, mix well, and add chocolate chips.
  • Spread the granola evenly in the pan and firmly press it down using a nonstick spatula or lightly oiled hands to ensure it's tightly packed.
  • Chill in the refrigerator for 2 hours.
  • Take out of the refrigerator and cut into 20 uniform pieces. Wrap each piece tightly in plastic wrap or enjoy right away.
