Indulge in Betty Crocker's chocolate-oat bar from her Diabetes Cookbook for a sweet treat!
Ingredients:
  • 3/4 cup semisweet chocolate chips
  • 1/3 cup (from 14-oz can) fat-free sweetened condensed milk (not evaporated milk)
  • 1 cup Gold Medal™ whole wheat flour
  • 1/2 cup quick-cooking oats
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 egg
  • 3/4 cup packed brown sugar
  • 1/4 cup canola or vegetable oil
  • 2 tablespoons quick-cooking oats
  • 2 teaspoons butter or margarine, softened
Instructions:
  • Preheat oven to 350°F and generously spray an 8- or 9-inch square pan with cooking spray.
  • In a small heavy saucepan, gently heat the filling ingredients over low heat, stirring often, until the chocolate is melted and the mixture is smooth.
  • Combine flour, 1/2 cup oats, baking powder, baking soda, and salt in a large bowl. In a separate medium bowl, whisk together egg, brown sugar, oil, and vanilla until smooth. Gently fold the wet mixture into the dry ingredients until fully combined. Set aside 1/2 cup of the dough in a small bowl for the topping.
  • Press the remaining dough into the pan. If the dough is sticky, lightly coat your fingers with cooking spray or dust with flour. Spread the filling evenly over the dough. Sprinkle 2 tablespoons oats and the butter over the reserved dough. Use a pastry blender or fork to mix until well combined. Scatter the mixture evenly over the filling.
  • Bake for 20 to 25 minutes until the top is golden and firm. Let it cool completely for about 1 hour and 30 minutes, then cut into 16 bars.
