Chocolate-Oat Bars

Wholesome chewy bars with whole grains and chocolate, a guilt-free treat for any occasion from Betty Crocker's Heart Healthy Cookbook.
Ingredients:
  • 1/2 cup semisweet chocolate chips
  • 1/3 cup fat-free sweetened condensed milk (from 14-ounce can)
  • 1 cup Gold Medal™ whole wheat flour
  • 1/2 cup old-fashioned or quick-cooking oats
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup packed brown sugar
  • 1/4 cup canola or soybean oil
  • 1 teaspoon vanilla
  • 1/4 cup fat-free cholesterol-free egg product or 1 egg
  • 2 tablespoons old-fashioned or quick-cooking oats
  • 2 teaspoons butter, softened
Instructions:
  • Melt chocolate chips and milk in a small heavy saucepan over low heat, stirring constantly until smooth; then, set it aside. Preheat oven to 350°F and coat an 8x8x2 or 9x9x2-inch square pan with cooking spray.
  • Combine flour, 1/2 cup oats, baking powder, baking soda, and salt in a large bowl. In a separate bowl, whisk together brown sugar, oil, vanilla, and egg until smooth. Gently fold the wet ingredients into the flour mixture until well combined. Set aside 1/2 cup of the dough for the topping.
  • Press the remaining dough into the pan (use cooking spray or flour on your fingers if the dough is sticky). Spread the chocolate mixture over the dough. Combine 2 tablespoons oats and butter with the reserved dough until crumbly using a pastry blender or fork. Drop small spoonfuls of the oat mixture evenly over the chocolate layer.
  • Bake for 20-25 minutes until the top is golden and firm. Allow to cool completely for about 1 1/2 hours. Cut into 16 bars by dividing into 4 rows by 4 rows.
