Homemade no-bake granola bars, perfect for quick snacks or breakfast, just like the ones from the store - no peanut butter needed!
Ingredients:
  • 1 cup rolled oats
  • 1 cup steel-cut oats
  • 1 cup crispy rice cereal
  • 0.5 cup chopped mixed dried fruit
  • 0.5 cup chopped almonds
  • 0.25 cup butter
  • 0.5 cup brown sugar
  • 0.25 cup honey
  • 2 teaspoons vanilla extract
  • 0.5 cup mini chocolate chips
Instructions:
  • Prepare the 9x13-inch baking dish by greasing it generously.
  • Combine rolled oats, steel-cut oats, rice cereal, dried fruit, and almonds in a large bowl, blending all ingredients well.
  • In a saucepan over medium heat, melt butter and then whisk in brown sugar, honey, and vanilla until sugar is fully dissolved, for about 2 minutes. Pour over oat mixture and stir to combine.
  • Smooth out the oat mixture in the baking dish and generously sprinkle chocolate chips on top. Let it set in the refrigerator until firm, approximately 1 hour.
  • Cut the cold granola mixture into 24 bars.
