Chia coconut French toast sticks served with raspberry-yogurt dip - a family favorite every time!
Ingredients:
  • 3 thick slices whole grain bread
  • 0.25 cup coconut
  • 0.25 cup chia seeds
  • 0.25 cup half-and-half
  • 1 tablespoon white sugar
  • 1.5 teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • 2 teaspoons unsalted butter, or as needed
  • 0.5 cup fresh raspberries
  • 0.5 cup vanilla yogurt
  • 2 ounces maple syrup, or to taste
Instructions:
  • Cut each slice of bread into 4 equally-sized sticks.
  • Combine the coconut, chia seeds, half-and-half, eggs, sugar, cinnamon, vanilla extract, and salt in a bowl, mixing until the batter is smooth.
  • In a large skillet over medium heat, melt the butter.
  • Coat bread sticks fully in the batter.
  • Sear the bread sticks in sizzling butter until golden brown on each side, about 2 to 3 minutes.
  • Microwave raspberries in a bowl until softened, about 1 minute. Stir in yogurt.
  • Coat French toast sticks in a luscious raspberry-yogurt sauce and drizzle with maple syrup for a decadent finishing touch.
