Creamy chia seed pudding made with coconut milk, sweetened with agave, and rich in omega-3s. Quick and satisfying dessert in just 30 minutes.
Ingredients:
  • 2 cups sweetened coconut milk
  • 6 tablespoons unsweetened coconut milk
  • 1 tablespoon agave nectar, or more to taste
  • 0.5 teaspoon vanilla extract
  • 0.25 teaspoon ground cinnamon
  • 1 pinch salt
  • 0.5 cup chia seeds
  • 0.5 cup diced fresh strawberries
Instructions:
  • In a bowl, combine sweetened and unsweetened coconut milks, agave nectar, vanilla extract, cinnamon, and salt; mix in chia seeds. Let it thicken for at least 20 minutes at room temperature or refrigerate overnight with plastic wrap.
  • Gently mix the pudding, then generously crown it with fresh strawberries.
