Tasty chicken, leek, and cheddar tart - great for sharing!
Ingredients:
  • 2 leeks, trimmed, halved, thinly sliced
  • 8.00 gm brown sugar
  • 2 small cooked Free Range Chicken Breasts, thickly sliced
  • 4 eggs
  • 83.33 gm pure cream
  • 250.00 ml grated cheddar
  • 40.00 ml chopped fresh flat-leaf parsley, plus extra to serve
  • 20.00 ml chopped fresh thyme, plus extra to serve
  • Salad, to serve
  • 500.00 ml plain flour
  • 175g cold butter, chopped
  • 2 egg yolks
  • 20.00 gm iced water
Instructions:
  • Prepare a 3cm-deep, 20cm round loose-based fluted flan tin by greasing it.
  • Prepare Cheddar Pastry: In a food processor, blend flour, butter, and cheddar until fine crumbs form. Add egg yolks and water, process until dough begins to come together. If needed, add a splash of extra water. Shape dough into a disc, roll it out between 2 sheets of baking paper to 5mm thickness. Line a tin with the pastry, trim the edges, and place on a baking tray. Cover with plastic wrap, chill in the refrigerator for 30 minutes before using.
  • Preheat your oven to 200C/180C fan-forced. Line the pastry case with baking paper and fill it with pie weights or uncooked rice. Blind-bake for 15 minutes, then remove the weights or rice and baking paper. Bake for another 10 minutes until the pastry just turns golden. Allow it to cool completely before moving on.
  • Heat oil in a large frying pan over medium heat. Stir in leek and cook for 15 minutes until softened. Sprinkle sugar over leek and continue to cook, stirring, for 5 minutes until caramelised. Allow mixture to cool before using.
  • Lower oven temperature to 180°C/160°C fan-forced, then place chicken and leek in pastry case. Combine eggs, cream, cheddar, parsley, and thyme in a jug, season with salt and pepper, and pour over chicken mixture. Bake for 40 to 45 minutes until tart is just set. Allow to stand for 10 minutes before serving.
  • Transfer the dish to a serving plate and generously garnish with extra parsley and thyme to enhance the flavors. Enjoy alongside a fresh salad for a delightful meal.
