Sticky chicken wings with caramelised onion and coconut rice

Indulge in irresistible sticky chicken wings that will keep everyone craving for more!
Ingredients:
  • 2 garlic cloves, crushed
  • 2cm piece fresh ginger, peeled, finely grated
  • 2.50 gm ground cinnamon
  • 57.20 gm honey
  • 65.63 gm soy sauce
  • 65.00 gm tomato sauce
  • 12 chicken wings
  • Fresh coriander leaves, to serve
  • Lemon wedges, to serve
  • 200.00 gm white rice
  • 18.40 gm vegetable oil
  • 6 green onions, sliced
  • 32.50 gm shredded coconut
  • 31.50 gm soy sauce
Instructions:
  • In a jug, mix together garlic, ginger, cinnamon, honey, soy sauce, and tomato sauce. Put chicken in a large glass or ceramic dish. Pour the marinade over the chicken and coat well. Cover the dish and refrigerate for 2 hours to enhance the flavors.
  • Preheat the oven to 200C/180C fan-forced. Line a large baking tray with baking paper, then place the chicken on it. Bake for 35-40 minutes until the chicken is golden brown and cooked through.
  • While the rice is cooking, caramelize onion and prepare coconut rice. Follow the rice packet instructions to cook until tender, then drain and set aside. In a hot wok, add oil and swirl to coat. Stir-fry onion for 3 minutes until golden and caramelized. Add coconut and stir-fry for 2 minutes until lightly browned. Mix in soy sauce and rice, stir-frying for 2 more minutes until well combined and heated through. Serve with chicken, coriander, and lemon wedges.
