Sticky chicken wings paired with Greek salad skewers for a delicious and satisfying lunchbox option.
Ingredients:
  • 89.38 gm honey
  • 1 tsp finely grated lemon rind
  • 20.00 ml finely chopped fresh oregano leaves
  • 12 (640g total) chicken nibbles
  • 4 cherry tomatoes, halved
  • 4 small iceberg lettuce leaves, halved
  • 4 pitted kalamata olives
  • 50g reduced-fat Greek fetta, cut into 2cm pieces
  • 1/2 small Lebanese cucumber, cut into 2cm pieces
Instructions:
  • Combine honey, garlic, lemon zest, and oregano in a bowl. Mix well. Add the chicken and toss until coated. Refrigerate for 1 hour, if possible.
  • Preheat the oven to 200C/180C fan-forced. Take the chicken out of the fridge and let it sit at room temperature for 15 minutes. Arrange the chicken in a glass or ceramic baking dish in a single layer, then drizzle any remaining honey mixture over the top.
  • Roast chicken until golden and cooked through, about 30 to 35 minutes, flipping once. Allow to cool.
  • Prepare Greek Salad Skewers by threading tomato, lettuce, olive, feta, cucumber, and tomato onto skewers, repeating until you have 4 skewers ready. Store the chicken and skewers separately in airtight containers in the refrigerator. When ready to serve, pack 3 pieces of chicken and 1 skewer into each lunchbox.
