Chicken, pak choy and soba noodle soup

Elevate your dish with aromatic ginger and lemongrass for an Asian flair.
Ingredients:
  • 2L chicken broth, chicken meat reserved (see related recipe)
  • 60ml (1/4 cup) soy sauce
  • 5cm-piece fresh ginger, peeled, thinly sliced
  • 1 lemongrass stem, halved lengthways
  • 180g soba noodles
  • 1 bunch baby pak choy, halved lengthways
  • 100g snow peas, halved diagonally
  • 21.00 gm lime juice
  • Thinly sliced fresh red chilli, to serve
Instructions:
  • In a large stockpot, bring chicken broth to a boil over high heat. Stir in soy sauce, ginger, and lemongrass. Reduce heat to medium and simmer for 5 minutes.
  • Add the noodles and cook for 4 minutes. In the last 2 minutes of cooking, gently add the pak choy, snow peas, and reserved chicken meat. Stir in the lime juice and serve with a side of chili.
