Ultimate comfort chicken soup, aromatic and soothing.
Ingredients:
  • 1 brown onion, halved, finely chopped
  • 1L (4 cups) chicken style liquid stock
  • 2 x 7cm pieces lemon rind, white pith removed
  • Pinch of saffron threads
  • 4 (about 600g) desiree potatoes, peeled, coarsely chopped
  • 2 small (about 400g) single chicken breast fillets, excess fat trimmed, halved lengthways, thinly sliced crossways
  • 1 bunch English spinach, ends trimmed, washed, coarsely chopped
  • Crusty bread, to serve
Instructions:
  • In a large saucepan over medium heat, heat the oil until shimmering. Next, cook the onion, stirring occasionally, for 5 minutes until soft. Then, add the garlic and cook, stirring, for 1 minute until fragrant.
  • Combine the stock, lemon rind, and saffron in a pot and bring to a boil. Lower the heat, add the potato, cover, and simmer for 30 minutes until the potato is tender.
  • Add the chicken and spinach to the soup, stirring continuously for 2 minutes until the chicken is tender. Season with pepper to taste.
  • Pour the soup into individual bowls and serve right away with some delicious crusty bread on the side, if desired.
