Chicken, Rice and Broccoli Bowls

Satisfy your cravings with a quick and delicious bowl meal ready in 20 minutes.
Ingredients:
  • 1 cup uncooked regular long-grain white rice
  • 1 teaspoon vegetable oil
  • 1 medium onion, cut into thin wedges
  • 1 can (19 oz) Progresso™ chicken & wild rice soup
  • 1 1/2 cups fresh broccoli florets
  • 1/2 medium red bell pepper, cut into bite-size strips (2/3 cup)
  • 3 tablespoons stir-fry sauce
Instructions:
  • Prepare rice following the instructions on the package, excluding salt and butter.
  • In a 10-inch skillet, heat oil over medium-high heat. Sauté onions for 4-5 minutes until they are crisp-tender, stirring frequently.
  • Combine the soup, broccoli, and bell pepper in the pan and bring to a boil. Cook over medium-high heat for 3 to 4 minutes, stirring often, until the broccoli is crisp-tender. Mix in the stir-fry sauce.
  • Evenly distribute the cooked rice among 4 serving bowls, then generously ladle about 1 cup of the delicious soup mixture over each bowl of rice.
