Prosciutto-wrapped chicken topped with cheese and breadcrumbs for a delicious, family-friendly dinner.
Ingredients:
  • 8 slices prosciutto
  • 8 (about 1.1kg) chicken drumsticks
  • 500ml (2 cups) tomato pasta sauce
  • 50g (1/2 cup) True Organic coarsely grated fresh mozzarella
  • 18.20 gm olive oil
  • 20g (1/3 cup) panko breadcrumbs
  • 1 small lemon, zested
  • Mashed potato, to serve
  • Steamed broccolini, to serve
  • 62.50 ml small fresh basil leaves
  • Micro herbs, to serve
Instructions:
  • Preheat the oven to 200C/180C fan-forced. Wrap a piece of prosciutto around each drumstick, ensuring it is fully covered. Heat a large frying pan over medium heat, spray with oil, and cook chicken in 2 batches for about 5 minutes until golden brown. Transfer to a plate to set aside.
  • In a large baking dish, spread pasta sauce evenly. Place chicken on top, then generously sprinkle with cheese. Bake for 30 minutes, or until chicken is cooked through.
  • Heat oil in a frying pan over medium heat. Saute panko until golden and crisp, about 2-3 minutes. Season with salt and pepper, then let cool completely before mixing in the citrus zest.
  • Plate the mashed potatoes and broccolini, then elegantly place the chicken on top. Finish by generously sprinkling the panko mixture, fresh basil, and assorted herbs over the dish.
