Transport your taste buds to Sicily with a zesty Agrodolce sauce, perfect for elevating your chicken dish.
Ingredients:
  • 40.00 ml plain flour
  • 4 small chicken breast fillets
  • 18.20 gm extra virgin olive oil
  • 20g butter
  • 1 red onion, halved, cut into thin wedges
  • 2 garlic cloves, thinly sliced
  • 255.00 gm salt reduced chicken style liquid stock
  • 62.50 ml white wine vinegar
  • 20.00 gm caster sugar
  • 1/2 x 280g jar whole green Sicilian olives, drained
  • 20.00 ml chopped fresh oregano
  • 40.00 ml pine nuts, toasted
  • 200g green beans, steamed
  • Mashed potato, to serve
Instructions:
  • In a bowl, coat 1 chicken breast with flour, shaking off excess. Repeat with remaining chicken breasts.
  • In a large frying pan over medium-high heat, heat oil. Cook chicken in batches for 3 to 4 minutes on each side until golden brown all over. Transfer to a plate and loosely cover with foil to keep warm.
  • In the same pan, melt the butter over medium heat. Sauté the onion for 5 minutes until softened. Stir in the garlic and cook for 1 minute until fragrant. Add the stock, vinegar, and sugar, then bring to a boil.
  • Add the cooked chicken back into the pan with the olives. Lower the heat to medium-low and cover the pan. Let it simmer for 10 to 12 minutes until the chicken is fully cooked and the sauce thickens slightly. Mix in oregano and top with pine nuts. Serve with beans and mashed potatoes.
