Chicken wings, agrodolce-style

Irresistible sticky sweet chicken wings, paired with flavorful bruschetta and pickled onions for a simple yet sensational meal.
Ingredients:
  • 4 cloves of garlic
  • 3 large red onions
  • 1 fresh red chilli
  • 16 free-range chicken wings
  • 1 small handful of raisins
  • 1 x 400 g tin of quality plum tomatoes
  • balsamic vinegar
  • runny honey
  • 2 sprigs of fresh rosemary
Instructions:
  • Preheat the oven to 170ºC/325ºF/gas 3. Slice the garlic, onions, and chilli. Place the chicken wings on double-layered tin foil, season with salt and pepper, then fold into a parcel. Bake for 45 minutes until tender. Make the glaze by cooking garlic, chilli, and onions until soft. Add raisins and tomatoes, simmer, then blend with balsamic vinegar and honey. Season and set aside. Heat oil, fry rosemary until crispy, set aside. Fry wings until golden, add glaze, coat wings. Top with pickled onions and crispy rosemary. Serve with griddled bruschetta, if desired. Enjoy!
