Chicken and avocado star dampers

Impress with savory chicken and avocado mini dampers.
Ingredients:
  • 225g (1 1/2 cups) self-raising flour
  • 30g butter, at room temperature, cubed
  • 125ml (1/2 cup) milk
  • Plain flour, to dust
  • 19.80 gm good-quality whole-egg mayonnaise
  • 1 x 200g container avocado dip
  • 75g shaved chicken breast
Instructions:
  • Preheat the oven to 220°C and prepare a baking tray with non-stick baking paper.
  • In a large bowl, gently rub the butter into the flour using your fingertips until it resembles fine breadcrumbs. Pour in the milk and use a round-bladed knife to mix until the dough just starts to come together. Be careful not to overmix; the dough should be soft but not sticky. Use your hands to bring the dough together.
  • Transfer the dough to a lightly floured surface and knead until smooth. Roll out the dough to a 7mm thickness using a floured rolling pin. Cut out star-shaped dampers with a 7.5cm cutter, making sure to dip it in flour first. Arrange the dampers on a lined tray, spacing them about 2cm apart.
  • Bake in a hot oven for 8 minutes or until dampers are golden and sound hollow when tapped on the top. Remove and cool on a wire rack.
  • Slice the dampers in half using a serrated knife. Spread one half with mayonnaise and the other with avocado dip. Place the chicken on one half and sandwich the halves together. Serve on a platter.
