Chicken and Avocado with Sweet Pepper Sauce

20-minute dinner: Chicken and avocado with sweet pepper sauce.
Ingredients:
  • 2 skinless boneless chicken breast (about 10 oz)
  • 1/3 cup reduced-sodium chicken broth
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 1/2 bell pepper (any color), cut into 1-inch pieces
  • 1/4 cup apricot spreadable fruit, melted
  • 1/4 ripe avocado, sliced
Instructions:
  • Heat chicken breast, broth, garlic powder, pepper, and bell pepper in a nonstick skillet over medium-high heat until boiling. Reduce heat, cover, and simmer for about 10 minutes, or until chicken reaches an internal temperature of 170°F and the juices run clear. Remove chicken and keep warm.
  • In a blender, combine the broth mixture and spreadable fruit. Blend until the red peppers are completely pureed. Slice the chicken breasts crosswise, then arrange the chicken and avocado slices on plates. Drizzle with the flavorful sweet pepper sauce before serving.
