Chicken and Cheddar Biscuits

Creamy chicken and vegetable stew accompanied by fluffy Cheddar biscuits, a cozy and comforting meal for chilly evenings.
Ingredients:
  • 2 cups chopped red potatoes
  • 1 cup coarsely chopped carrots
  • 0.5 cup coarsely chopped onion
  • 0.5 cup coarsely chopped celery
  • 1 (4 ounce) can sliced mushrooms, drained
  • 2 cloves garlic, minced
  • 0.5 teaspoon crushed dried thyme
  • 0.5 teaspoon crumbled dried sage
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 2 tablespoons quick-cooking tapioca, crushed
  • 1 pound bone-in chicken thighs, skin removed
  • 1 cup chicken broth
  • 1.6666666269302 cups baking mix
  • 0.5 cup shredded Cheddar cheese
  • 0.5 cup milk
  • 1 cup frozen peas
  • 1 (3 ounce) package cream cheese, cubed
Instructions:
  • Combine potatoes, carrots, onion, celery, mushrooms, garlic, thyme, sage, salt, and black pepper in a 4-quart slow cooker. Sprinkle tapioca over the vegetables, then add chicken thighs and pour chicken broth over everything.
  • Cook on low for 6 to 7 hours or on high for 3 to 3 1/2 hours until vegetables and chicken are tender and sauce has thickened to perfection.
  • Preheat the oven to 450 degrees F (230 degrees C about 30 minutes before serving.
  • Combine biscuit mix and Cheddar cheese in a bowl until fully mixed; stir in milk. Transfer dough to a floured surface and knead 10 times. Roll out dough into a 1/2-inch thick circle and cut out biscuits using a floured 3-inch biscuit cutter. Arrange biscuits on an ungreased baking sheet.
  • Bake biscuits in the oven until golden brown, for about 10-12 minutes.
  • Once the biscuits are in the oven, take out the chicken thighs from the slow cooker and allow them to cool slightly. Remove the meat from the bones, chop it coarsely, and discard the bones. Put the chicken meat back in the slow cooker along with peas and cream cheese. Stir until the cream cheese melts and the sauce is creamy. Cook for an additional 10 minutes. Serve alongside Cheddar biscuits.
