Chicken and Green Chile Muffins

Tasty chicken muffins with Bisquick® mix and zesty green chiles from Old El Paso®.
Ingredients:
  • 3 tablespoons butter or margarine
  • 1 medium sweet onion, finely chopped (1/2 cup)
  • 1 1/2 cups Original Bisquick™ mix
  • 2 cups shredded Mexican cheese blend (8 oz)
  • 1 egg
  • 1/2 cup milk
  • 1 cup finely chopped cooked chicken
  • 1 can (4 oz) Old El Paso™ Chopped Green Chiles
Instructions:
  • Preheat the oven to 425°F. Coat 12 regular-size muffin cups with cooking spray. In an 8-inch skillet over medium-high heat, melt butter and sauté onion for 3 to 5 minutes until tender, stirring occasionally.
  • Combine Bisquick mix and 1 cup of cheese in a large bowl. In a separate bowl, whisk together egg and milk until smooth. Create a well in the center of the dry ingredients, then gently mix in the egg mixture until just combined. Fold in onion, chicken, and chiles.
  • Distribute batter evenly into muffin cups, filling each two-thirds full and top with the remaining 1 cup of cheese.
  • Bake until golden brown, approximately 18 minutes. Allow to cool for 2 to 3 minutes, then remove from the pan and serve warm.
