Spicy chicken piquant with diced tomatoes and green chile peppers - perfect for quick weeknight dinners.
Ingredients:
  • 0.5 cup all-purpose flour
  • 0.5 teaspoon Creole seasoning (such as Tony Chachere's®)
  • 1 (16 ounce) package boneless, skinless chicken breast tenders
  • 1 tablespoon olive oil
  • 1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)
  • 0.25 cup diced sweet pickles
  • 2 tablespoons red wine vinegar
  • 2 tablespoons drained capers
  • 2 garlic cloves, crushed
Instructions:
  • Combine flour and zesty Creole seasoning in a flat dish. Coat chicken with the seasoned flour, shaking off any extra.
  • 1. Heat oil in a skillet over medium heat. Brown chicken on both sides for about 2 minutes each. 2. Add diced tomatoes with green chile peppers, pickles, vinegar, capers, and garlic. Simmer until chicken is cooked through, about 10 minutes. 3. Check the chicken's doneness with an instant-read thermometer which should register at least 165°F (74°C) in the center.
