Quick and easy chicken and dumplings made with creamy soup and baking mix for a comforting meal.
Ingredients:
  • 3 tablespoons vegetable shortening
  • 1 cup all-purpose baking mix
  • 2 teaspoons salt
  • 1 teaspoon paprika
  • 0.125 teaspoon ground black pepper
  • 2.5 pounds bone-in chicken parts
  • 2 (10.5 ounce) cans cream of chicken soup, undiluted
  • 3 cups milk
  • 2 cups all-purpose baking mix
  • 0.66666668653488 cup milk
  • 0.5 teaspoon dried parsley
  • 0.25 teaspoon poultry seasoning
Instructions:
  • In a large skillet, heat shortening over medium-high heat. In a medium bowl, combine 1 cup baking mix with salt, paprika, and pepper. Coat chicken with mixture and fry in the hot shortening until golden brown. Transfer chicken to paper towels to drain excess fat.
  • Clean the skillet and put it back on the stove. Combine soup and milk in the skillet. Add chicken, bring to a boil, then cover and simmer on low for 45 minutes, flipping the chicken occasionally.
  • In a medium bowl, mix 2 cups baking mix with milk, parsley, and poultry seasoning until a soft dough forms. After cooking the chicken for 45 minutes, spoon tablespoonfuls of the dumpling mixture into the simmering gravy. Cook uncovered for 10 minutes, then cover and cook for an additional 10 minutes until the dumplings expand.
