Chicken and Penne Primavera

Try this quick and delicious cheesy pasta and chicken dish - an Italian-inspired favorite ready in just 30 minutes on the stove top!
Ingredients:
  • 1 1/2 cups uncooked penne or mostaccioli pasta (5 1/4 oz)
  • 2 teaspoons olive oil
  • 1 lb boneless skinless chicken breasts, cut into 1-inch pieces
  • 1 cup sliced zucchini
  • 1 cup sliced yellow summer squash
  • 1 cup cut (2 inch) fresh asparagus spears
  • 1/2 cup reduced-fat Italian dressing
  • 1/4 cup chopped fresh basil leaves
  • 1/3 cup shredded Parmesan cheese (1 1/3 oz)
  • Coarsely ground black pepper, if desired
Instructions:
  • Prepare the pasta according to package instructions, without adding salt. Drain and set aside.
  • In a 4-quart Dutch oven, heat the oil over medium-high heat. Cook the chicken for about 5 minutes, stirring occasionally, until it is golden brown on the outside and cooked through in the center.
  • Combine zucchini, squash, and asparagus in the pot. Cook for 5 minutes, stirring occasionally, until vegetables are tender-crisp.
  • Combine the pasta with the chicken mixture and gently mix. Add the dressing and basil, and heat until everything is warmed through. Finish off by topping with cheese and a sprinkle of pepper before serving.
