Creamy chicken and vegetable penne pasta.
Ingredients:
  • 3 cups penne pasta, uncooked
  • 2 tablespoons KRAFT Light Zesty Italian Dressing
  • 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch chunks
  • 2 zucchini, cut into chunks
  • 1.5 cups cut-up fresh asparagus (1-inch lengths)
  • 1 red pepper, chopped
  • 1 cup fat-free, reduced-sodium chicken broth
  • 4 ounces PHILADELPHIA 1/3 Less Fat Cream Cheese, cubed
  • 0.25 cup KRAFT Grated Parmesan Cheese
Instructions:
  • Prepare the pasta according to package instructions.
  • Heat the dressing in a large skillet over medium heat. Cook the chicken and vegetables for 10 to 12 minutes, stirring frequently until chicken is cooked through. Stir in the broth and cream cheese, cooking for 1 minute until the cheese is melted, stirring constantly. Mix in the Parmesan cheese thoroughly.
  • After draining the pasta, add the chicken and vegetable mixture back to the pot with the pasta. Gently toss everything together and cook for 1 minute or until heated through. Keep in mind that the sauce will thicken as it sits.
