Create a colorful summer fruit tart with kiwi, berries, and mandarin oranges on a cookie crust topped with a creamy sauce.
Ingredients:
  • 1 (16.5 ounce) package refrigerated sliceable sugar cookies, sliced
  • 1 (8 ounce) package PHILADELPHIA Cream Cheese, softened
  • 0.25 cup sugar
  • 0.5 teaspoon vanilla
  • 4 cups assorted cut-up fruit (kiwi, strawberries, blueberries, drained canned mandarin oranges)
  • 0.25 cup apricot preserves, pressed through sieve to remove lumps
Instructions:
  • Preheat oven to 375°F.
  • Prepare a 12-inch pizza pan by lining it with foil and spraying it with cooking spray. Place the cookie dough slices in a single layer on the pan and press them together to form the crust. Bake for 14 minutes, then allow it to cool completely. Invert the crust onto a plate and gently remove the foil before turning the crust back over.
  • Blend cream cheese, sugar, and vanilla until smooth. Spread mixture evenly over crust.
  • Place a layer of fresh fruit on top. Combine preserves and water, then brush over the fruit. Chill in the refrigerator for 2 hours.
