Chicken and star noodle soup

Excite children with star-shaped noodle chicken soup.
Ingredients:
  • 9.20 gm olive oil
  • 1/2 small brown onion, finely chopped
  • 1 small carrot, peeled, finely chopped
  • 2 (about 200g each) chicken breast fillets, thinly sliced across the grain
  • 1L (4 cups) chicken style liquid stock
  • 200g fresh rice noodle sheets
  • 2 green shallots, ends trimmed, thinly sliced diagonally
Instructions:
  • In a large saucepan over medium heat, heat the oil. Sauté the onion and carrot for 5 minutes until the carrot softens. Add the chicken and cook for another 5 minutes until browned all over.
  • Pour in the flavorful stock and bring it to a vigorous boil. Lower the heat to a gentle simmer and let it cook for about 10 minutes, or until the chicken becomes beautifully tender.
  • Fold rice noodle sheets in half lengthwise, then use a 3.5cm-diameter star-shaped pastry cutter to cut out star shapes from the sheets.
  • Stir in star noodles and half of the shallot, then simmer for 5 minutes until the rice noodles separate and are heated through. Serve in bowls, garnish with the remaining shallot, and enjoy right away.
