Cozy up with this easy chicken and stuffing casserole loaded with tender chicken, vegetables, and golden stuffing, perfect for a comforting meal.
Ingredients:
  • cooking spray
  • 0.25 cup butter
  • 1 (6 ounce) package quick-cooking stuffing mix (such as Stove Top®), or more to taste
  • 1 tablespoon butter
  • 1 medium onion, diced
  • 3 stalks celery, diced, or more to taste
  • 1 (10.5 ounce) can low-sodium cream of chicken soup
  • 0.5 (10.5 ounce) can low-sodium cream of mushroom soup
  • 1 (8 ounce) container sour cream
  • 1 whole cooked rotisserie chicken - skinned, boned, and meat shredded
  • salt and ground black pepper to taste
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and generously spray a 9x13-inch baking dish with cooking spray.
  • In a saucepan over medium heat, bring water and 1/4 cup of butter to a boil. Stir in stuffing mix until combined. Remove from heat, cover, and let sit for about 5 minutes until water is absorbed. Fluff the stuffing with a fork before serving.
  • In a skillet over medium heat, melt 1 tablespoon of butter. Sauté the onion and celery until softened, for about 5 to 10 minutes.
  • Combine the condensed soups and sour cream in a bowl, mixing until smooth.
  • Evenly distribute the shredded chicken at the bottom of the baking dish. Cover the chicken with the delicious onion mixture and generously season with salt and pepper.
  • Spread the soup mixture over the top and evenly distribute the stuffing on top.
  • Bake in the oven until the filling is bubbling and the topping is golden brown, approximately 1 hour.
  • Garnish with a sprinkle of fresh herbs for an extra burst of flavor before serving piping hot and savoring every delicious bite!
