Easy and customizable chicken burritos for a delicious mid-week meal. Personalize with your favorite fillings at the table.
Ingredients:
  • 1 medium onion, sliced
  • 400g can diced tomatoes
  • 50g burrito seasoning mix
  • 300g can kidney beans, rinsed and drained
  • 1 small BBQ chicken, meat removed from bones & shredded
  • 400g tortilla
  • 1/2 small iceberg lettuce, shredded
  • 2 tomatoes, chopped
  • 250.00 ml grated cheddar cheese
  • 176.25 gm Light Sour Cream
  • Guacamole dip (optional)
Instructions:
  • In a frying pan over medium heat, sauté onion in oil until soft, about 2-3 minutes, stirring frequently.
  • Combine the seasoning mix, crushed tomatoes, and 1 cup water in a pot. Cook uncovered for 3-5 minutes until thickened. Mix in kidney beans and shredded BBQ chicken, heating until warmed through.
  • Warm the burrito tortillas based on the instructions on the packet. Layer the warm tortillas with shredded lettuce, chicken mixture, tomato, cheese, and a generous spoonful of sour cream. Fold the tortillas and secure with a toothpick. Optionally serve with guacamole.
