Mozzarella and balsamic chicken with spinach and tomato, served with pesto pasta.
Ingredients:
  • 3 tablespoons olive oil
  • 2 cups spinach
  • 4 skinless, boneless chicken breast halves
  • salt to taste
  • 2 beefsteak tomatoes, sliced
  • 2 (4 ounce) balls of buffalo mozzarella, sliced
  • ground black pepper
  • 1 tablespoon balsamic vinegar, or to taste
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C).
  • In a large skillet, heat olive oil over medium heat. Stir in garlic and cook until slightly softened, about 2 minutes, stirring frequently. Add spinach and toss with garlic-infused oil, then cover and remove from heat. Let the spinach mixture sit to wilt the leaves.
  • In an oven-safe skillet, heat an additional 3 tablespoons of olive oil. Brown chicken breasts for about 4 minutes on each side in the hot oil, then season with salt. Top each breast with 1/4 of the wilted spinach, tomato slices, and mozzarella slices. Finish with a sprinkle of ground black pepper and a drizzle of balsamic vinegar.
  • Bake until the cheese is golden and the chicken is cooked through, which should take around 15 minutes. Check by inserting an instant-read meat thermometer into the thickest part of a breast - it should register at least 160°F (70°C).
