Spicy veggie sauté jazzes up classic Creole chicken.
Ingredients:
  • 1 clove garlic, minced
  • 1 medium onion, thinly sliced
  • 1 stalk celery, sliced thin
  • 1 medium green bell pepper, minced
  • 2 (14.5 ounce) cans diced tomatoes
  • 1 large bay leaf
  • 0.125 teaspoon cayenne pepper
  • 4 skinless, boneless chicken breasts
Instructions:
  • Preheat your oven to 350°F (175°C).
  • Heat oil in a large skillet over medium heat. Sauté garlic, onion, celery, and bell pepper until tender, about 4 minutes. Add tomatoes, bay leaf, salt, and cayenne pepper. Simmer the flavorful sauce for an additional 3 minutes, stirring frequently.
  • Place the chicken breasts in a baking dish and generously coat them with the flavorful Creole sauce.
  • Bake until chicken is tender and white all the way through, about 15 to 20 minutes.
