Savor zesty green salsa on quick and tasty Mexican chicken pizza with flour tortilla crust - ready in 25 minutes.
Ingredients:
  • 4 flour tortillas (8 to 10 inches in diameter)
  • 1 tablespoon vegetable oil
  • 1 medium onion, thinly sliced
  • 2 cups chopped cooked chicken
  • 1/2 cup green salsa (salsa verde)
  • 1 can (2 1/4 ounces) sliced ripe olives, drained
  • 1/3 cup sour cream
  • 1 cup shredded Monterey Jack cheese (4 ounces)
Instructions:
  • Preheat oven to 400°F. Arrange tortillas on a baking sheet. Bake for around 5 minutes until they are crispy.
  • While the tortillas bake, heat oil in a 10-inch nonstick skillet over medium heat. Sauté onion until tender; then remove from heat and mix in chicken, salsa, and olives.
  • Evenly layer tangy sour cream on the tortillas, then generously spoon the savory chicken mixture and sprinkle with cheese. Bake until the cheese is gooey and bubbly, about 5 to 6 minutes.
