Delicious fried rice variation to satisfy any crowd.
Ingredients:
  • 42.00 gm light soy sauce
  • 44.00 gm sweet chilli sauce
  • 48.80 gm Asia Oyster Sauce
  • 36.40 gm peanut oil
  • 600g chicken breast fillets, trimmed, thinly sliced
  • 1 brown onion, cut into thin wedges
  • 2 garlic cloves, crushed
  • 2 eggs, lightly beaten
  • 600.00 gm cooked jasmine rice, cooled (see note)
  • 250.00 ml Thai basil leaves
  • 4 green onions, sliced diagonally
  • 62.50 ml fried shallots
Instructions:
  • In a small bowl, mix soy sauce, sweet chili sauce, and oyster sauce together. Set aside. Heat a wok over high heat. Add 3 teaspoons of oil and swirl to coat the pan. Stir-fry half of the chicken until browned, about 2 minutes. Transfer to a plate and repeat with the remaining chicken.
  • Pour the remaining 2 teaspoons of oil into the wok along with the onion. Stir-fry until golden, then add the garlic and stir-fry for 30 seconds. Mix in the egg and rice, and stir-fry until the egg is fully incorporated into the rice.
  • Add the cooked chicken back to the wok and pour in the soy sauce mixture. Toss in the fragrant basil and chopped green onions. Stir everything together for 1 to 2 minutes until fully mixed. Serve the delicious dish in bowls and top with crispy fried shallots before enjoying.
